Almaz Adhanom is the founder and heart behind Lucy Ethiopian Restaurant, a dream realized to share the authentic flavors and rich culinary heritage of Ethiopia. Drawing on years of experience across various roles in the restaurant industry, she created a welcoming space along Denver’s vibrant East Colfax corridor, serving traditional dishes like doro wat, tibs, lamb alicha, and vegetarian specialties, all accompanied by soft, freshly made injera.

Named after the famous 3.2-million-year-old Lucy fossil from Ethiopia, the restaurant honors her cultural roots while offering diners a meaningful connection to Ethiopian traditions. Through family-style dining, attentive service, and storytelling, Almaz ensures every visit is more than a meal—it’s a warm, communal, and memorable experience that celebrates both food and culture.
